Abstract:
Vegetables are fundamental to ensuring nutritional adequacy and promoting overall health due to their high content of essential vitamins, minerals, dietary fiber, and phytochemicals. These nutrients play a critical role in preventing various chronic diseases, including cardiovascular diseases, diabetes, and certain cancers, while also contributing to overall gastrointestinal health and vision. Despite their recognized health benefits, many parts of the world still face a deficit in vegetable consumption, leading to malnutrition and related health issues, especially in developing countries. Increasing vegetable consumption, promoting diverse dietary habits, and addressing nutritional deficiencies are necessary to improve global health outcomes. Additionally, the global vegetable seed market has seen steady growth, highlighting the increasing demand for vegetables in a growing population. A well-rounded vegetable diet can significantly reduce malnutrition rates and the associated socioeconomic costs. By promoting the consumption of a variety of vegetables and integrating vegetable cultivation into educational and public health programs, significant strides can be made toward achieving better health for all. This review emphasizes the role of vegetables in addressing nutritional gaps, their contribution to disease prevention, and the importance of global strategies aimed at improving vegetable consumption to meet nutritional requirements.
