Fuzzy logic for sensory evaluation of fortified paper sweets

Abstract:

Paper sweet is very well known and is widely recognized because of its taste and mark looks in the two Telugu states (Andhra Pradesh and Telangana). The crispy rice paper is the heart of the sweet and prepared by using rice starch-based batter spread on wood-fired earthen pot. In the present study, paper sweets were prepared using fortified edible films with carrot and beetroot juices and stuffed with jaggery and nuts. Fortified paper sweets were compared with paper sweet without using fortified film for sensory evaluation. Fuzzy logic sensory study was conducted for analysis and to compare the acceptability of these paper sweet variants. The results concluded that paper sweets samples prepared with carrot juice fortified edible films with jaggery and nuts received the best response for their sensory qualities.
