Studies on biochemical characteristics of little millet

The biochemical characteristics viz., proximate composition (moisture content, carbohydrate content, crude protein, crude fat, crude fibre and total ash) and anti-nutrients (phenols, tannins and phytic acid) of little millet (Panicum miliare) of variety LM-8437-17 were determined by following the procedures as outlined in AOAC (2016). Little millet was found to have a moisture content of 12.15±0.10%, carbohydrate content of 62.25±0.08%, crude protein of 11.30±0.14%, crude fat of 3.89±0.06%, crude fiber of 7.67±0.01%, and total ash of 2.60±0.07%. The anti-nutrient levels were 5.10±0.14 mg/g for phenols, 0.42±0.02 mg/g for tannins, and 8.41±0.15 mg/g for phytic acid.
