Development of nutritive enriched edible dessert cups

This study aimed to introduce an edible dessert cup enriched with finger millet. Most of the plastic is not recyclable and the vast majority does not biodegradable. Edible cups are environment friendly as they can easily discarded and eaten by the animal. These can be used as utensils and also solid and semi-solid things can be served in it. They do not get soggy quickly. The edible cups have been prepared from finger millet and proso millet with different composition viz., 20:30%, 30:30%, 40:20%, 60:0%, respectively. The process for preparation of edible dessert cups was standardized on the basis of sensory evaluation study. It was observed that cups prepared with 40% finger millet and 20% proso millet (T3 treatment) was highly accepted. Physical properties of best treatment (T3) such as diameter, depth, thickness, weight, surface area and volume were 58.08mm, 19.71mm, 2.12 mm, 6.96 gm. 27.45 cm³, 71.43 ml, respectively. It has good water holding capacity with absorption less than 23.5%. The T3 treatment displayed moderate level of biodegradability, reaching 29.3% in 30 days.
